HOLDEN MANZ CABERNET SAUVIGNON 2010

HARVEST

 2010 was an interesting vintage with a few hot spells and very little rain. The heat spikes did not endure and the cool nights offered respite for the vines allowing good accumulation of colour and flavor. Wines from this vintage show superb balance and intricacy of flavour.

COLOUR

This wine has a deep ruby centre with a dark red edge.

NOSE

An intense nose filled with berry sensations that complement the magnificent black fruit and extract of pepper and spice notes.

PALATE

Very big on the palate with rich entry of ripe red ripe berry fruits. The middle palate is focussed and shows width with complexity and depth leading to a full dry finish. Pliable tannins are present and balanced combining well with the flavours of the sappy black fruit.

Winemaker’s Notes:

The Cabernet Sauvignon for the 2010 vintage was selected from three distinct parcels with three varying soil types.  This complexity in growing has resulted in wonderful intricacy in the wine. The grapes were picked at optimal ripeness to enable the correct balance between sugar and phenolics.

Individual varieties were bunch and berry sorted, crushed and destalked to tank. After 3 days of cold soak at 10°C, alcoholic fermentation was initiated. The blend was made from selected barrels of the three blocks and was matured in barrique for 14 months.

  • Classic beef bourguinon with a rich gravy and roasted onions.
  • Filet mignon with a rich balsamic glaze with seasonal vegetables.
  • Five-spice roasted duck breast with smoked mashed potatoes.
